Watermelon Slush

Well its becoming summer time and one of the best treats is a slushy.
This is a very simple way of making and having enough to last for more than one day!


~4 cups of Watermelon
~1 Lime
~1/4c. Sugar


Cut up the watermel
on in bite size pieces


Squeeze the lime juice in a blender and add in the sugar on top.


Place in the watermelon and puree till completely smooth.


Once its all smooth place in a freezable dish and cover
with susan wrap and freeze for a few hrs.


When its ready just scrap with a spoon and....



ENJOY!!!

Cheesy Mot Sticks

My all time fav appetizer is cheese sticks, I could prob eat them every meal..lol
The ones I get from the grocery store are ok but not the best so I figured i could just make em'.
Doesn't take a genius!

~1 pk. of Mot. cheese sticks
~1c. Flour
~3 Eggs
~1-2c. Italian Bread crumbs (this time)


Set up a assembly line...


Next cut sticks in half and start dipping' em'


Start with the flour and then egg and then finally the bread crumbs.

Once they are all coated place in freezer for 30 mins or if u have time put in fridge for a few hrs.



Heat oil in skillet
Start fryin, they will only take 1-2 mins.
If the cheese starts oozing out b4 they have turned brown then the oil is to hot!



When they are done frying, dry on paper towels

Enjoy the cheesy goodness!!

Asian Broccoli Chicken

~1lb. Chicken
~1tbsp Garlic
~1 Lg. bunch of Broccoli
~1/2c. Water
~1/2 Red Pepper
~1/4c. Catalina Dressing
~1&1/2tbsp. Soy Sauce
~1c. Rice

Cook rice as directed

Cut up the chicken and cook with garlic in a lil bit of oil.
While the chicken is cooking give the broccoli a rough chop.
Once chicken is done place in a bowl, add the broccoli and the water in skillet
and cook till tender.


Once the broccoli is done add the pepper, dressing, soy sauce and chicken back to skillet.



Simmer for about 5 or so mins. (till peppers are tender and juice is not so runny)



Once it's done simmering give one last mix
Plate a pile of rice and top with chicken mix.


If I have them around, I like to top with cashews for lil saltiness!

Who Wants Pound Cake?

Sometimes you need a lil sweetness but not to much.
I have just the perfect cake for that....POUND CAKE!
This is a very simple but delicious cake to have around for a snack.
Now there is about 1000 ways of baking this type of cake
and just the same amount of flavorings to add to it.
But I must say my favorite recipe to go to comes from my Mother-in-law.
Let's get started!



~2 Sticks Butter (soften)
~3c. sugar
~1/2c. Crisco
~5 eggs
~3c. Plain Flour (sift then measure)
~1/2tsp. Baking Powder
~1 Tbsp. Vanilla
~1c. Carnation Milk (put flavoring in milk)



When you make this cake its good to have everything measured and in bowls ready to go.
When you measure the flour you have to sift it 3 times with
baking powderthen measure!!


Cream sugar, butter, and crisco until fluffy.
add eggs 1 at a time, blending well after each one.




(HINT)
You need to add the vanilla to the the milk before you start to add it






























Put into a greased and floured pan....

When all done this is what it looks like when ready for the oven




This is prob the most important part to this recipe....DON'T PREHEAT!!
Throw it in a cold oven!

Bake @ 300 for 1 & 1/2 hrs

When it's all done I like to let it rest for about 20 mins or so before I flip it out

All that love just steamin' out....YUMMY!
Now this cake will be so moist and stay moist for a while
and it will be gone before you know it!!!

Cream style Corn


If you have ever been to the south and had food from there you know that it is probably the best place on earth to eat! Being a military wife we have been to a few different places and have seen different kinds of food. I'm not saying this just because I miss the south so much, but I seriously now really believe that the best food is there!! When we were at our 1st base I came to really learn that there is no where to get girts!! (well then) I love grits and won't eat eggs with out em! But now we can get them at commissary...but anyway....I also learned that no one knows what cream style corn is); How sad is that, it's prob one of the best ways to eat it! Then we moved to our 2nd base and same thing! Well I decided to just make it!



~Corn on the Cob
~Salt
~Pepper
~Water

First you have to cut the corn half way off the cob
*DON"T GO ALL THE WAY TO COB*
Then take the dull side of the knife and scrap th
e cob with it....this get the "cream" from the corn and the rest of the cornels off.
This is what make the CREAM STYLE!
Put in a skillet add Salt and Pepper
Now add just enough water to the consistency that you want
(a few tbsp)


And there you go, you have southern Cream Style Corn

BUZZ!


Riley wanted to do Toy Story for her 3rd bday so I thought it would be cool to do a cake from T.S.....well...

let me tell ya something....
now i can bake and cook all day long!

But when it comes to decorating...I'm still learning! My mom is SO good at this
and I hope to be too one day!

Now this was almost 2 years ago and have gotten better, Thank Gah!

BUT

After a ALL nighter buzz was done!

The Outcome Not What I wanted...):

Have you ever been wanting to cook a meal and before you start you get so excited because you are just so ready to eat this meal....well that kinda happened to me last night...lol I had been seeing Chicken Parm everywhere and decided ok I'm gonna do it. Well as i started I looked at few different ways of doing and got a idea how i wanted to put my twist on it. And as always at the last minute i changed my mind on one thing and decided to do it another way...well I should have just stayed with my original thought. OK well let me get back to cooking.....I get everything prepped and set up to start going. As I'm going everything is looking good and I'm still looking forward to eating this. As I'm going I'm the pics to upload and then I realized there was one shoot I wanted but I didn't get so I start to get frustrated but remind myself it was just one pic no big deal. Well everything gets done I start plating it and it looks sooo good....then I start to dig in.....well it's good but so not what I hoping for): Right then and there is when I realized I should have done what I first thought of!!! That one little thing had changed the whole outcome...which in the food world is life or death! So as I finished eating because it wasn't horrible, and then clean up I came to realize that i have to stop second guessing myself...which for me is easier said then done! So I will try this one again with my original plan and will post because I know that will be a hit! lol So I hope this will help y'all not to second guess your self either when your in kitchen!!

Yummy Garlic Pork Chops






My hubby is not a fan of pork unless it is BBQ,
so to get him to eat it any other way is a challenge.
So I came up with this and I could't believe it but he love it!
Trust me he could so be a food critic, so I was very pleased with
this one!!!


~4 thin no bone chops
~Salt
~Pepper
~Garlic Powder
~Italian Bread Crumbs
~veg Oil
~Butter


Season with salt and pepper and garlic powder



Then coat with the bread crumbs


Heat oil and a few tbsp of butter in skillet
cook 3-5 mins on med heat to get a nice brown color and crispy coating
Afterward...
Dry on paper towel and ENJOY!



YUM is all there is to say!

Hint: The butter is what gives it the brown color so you can omit it!

Loaded Potato Cups

This is a twist on the same ol potato skins.
Don't get me wrong the classics are always good, but
sometimes you just need a lil change.
We
ll here it is!


~Red Potatoes
~1 Ranch Dressing Mix
~16oz Sour Cream
~Salt
~Pepper
~Cheddar Cheese
~Bacon

Start by baking potatoes
@400 till
soft

While baking mix Ranch mix with Sour Cream
When pots are done..cut in half and scoop insides out


Put the insides in a bowl and mash up.
Mix ranch with the insides (4 pots=4-5 (big)tbsp)
and add salt and pepper to taste

Refill the skins with the mixture and
top with cheese


Put back in the oven to melt the cheese and
top with bacon!
